It hurdles the language barrier, makes friends , warms the heart, infact i find food as a great uniting force.Keeping this spirit in mind,On the eve of new year I am sharing with all of you a spongy chocolate curd cake recipe made without eggs which I had learnt from my mother. Believe me the cake comes out absolutely perfect.... Ingredients for Eggless Chocolate Curd Cake:
Maida or all purpose flour - 1&3/4th cup
Unsweetened Coco powder- 1/4th cup
Curd- 1 & 1/2 cup
Sugar- 1 cup (powdered)
Butter- 100 gms (Vegetable oil can also be used with same quantity or You can use oil or half butter)
Baking soda- 1 teaspoon (level)
Salt - 1/2
Method
1. Take a 8-9 inch tin, oil it and line it with butter paper 2. Preheat over at 180 degrees C
3. Sieve maida, baking soda and coco powder together so that they mix well together. (sieve it 2-3 times)
4. In a big mixing bowl put curd and sugar and mix well using a hand beater or a whisk.
5. Add butter to this and again mix well
6. Start folding in the maida mixture to the curd,sugar,salt, butter mixture 2 table spoon at a time. Use a big spoon to do this.
7. If the consistency is too thick, you can add little more curd, however, generally 1&1/2 cups are enough.
8. Pour the batter in a greased tin, and put it in the preheated oven.
9. Bake for 45-50 mins at 180 degrees
10. Once done, just stick a knife or a tooth pick in the cake and it should come out clean, if the batter sticks to the knife or toothpick, it means just put it for another 5-7 mins, or more if required.
11. You can sprinkle some icing sugar on it if you want
This is a delicious and easy tea time ,any time cake
